Ingredients

Main Ingredients

  • 8 pieces Rice paper wrappers (round; large size) Use large size for best results.
  • 8 oz Rice noodles (vermicelli or thin rice sticks) Cook according to package directions.
  • 1 cup Carrots (julienned) For filling.
  • 1 cup Cucumber (seeded and julienned) For filling.
  • 1 cup Bell peppers (thin strips) For filling.
  • 1/2 cup Fresh herbs (cilantro, mint, or Thai basil) For filling.
  • 2 tbsp Soy sauce or tamari For serving.
  • 8 oz Firm tofu (pressed and thinly sliced), optional For extra protein.
  • 8 oz Cooked shrimp or shredded chicken, optional For additional protein.
  • 1 tbsp Cooking spray or neutral oil (grapeseed, avocado) For air-frying.

Instructions

Preparation

  • Cook rice noodles according to package directions. Drain, rinse with cold water, and toss lightly with a splash of oil to prevent sticking.
  • Prepare vegetables and herbs: trim, julienne, and pat dry so they don’t make the rolls soggy.
  • Fill a shallow bowl with warm water. Dip one rice paper wrapper for 5–10 seconds until it’s soft but still slightly firm—it will continue to soften as you work.
  • Lay the wrapper flat. Place a small handful of rice noodles in the center, then add vegetables, herbs, and protein if using. Don’t overfill—aim for compact rolls.
  • Fold the bottom edge over the filling, fold in the sides, and roll tightly to seal.

Cooking

  • Spray the air fryer basket with cooking spray. Place rolls seam-side down in a single layer, leaving space between them.
  • Lightly spray or brush the tops of the rolls with oil. Air fry at 375°F (190°C) for 10–12 minutes, turning once halfway through, until golden and crisp.

Serving

  • Serve hot with soy sauce, tamari, or a dipping sauce of your choice.

Notes

Store cooled rolls in an airtight container lined with paper towel for up to 2 days. Re-crisp in the air fryer at 350°F (175°C) for 3–5 minutes. Not recommended for freezing after cooking.
