Ingredients
  

For the Cookie Dough Base

  • 1 cup almond flour This gives it that perfect nutty flavor.
  • 2 tablespoons melted coconut oil Helps bind it all together. You can use melted butter if you prefer.
  • 1/4 cup maple syrup Sweet, sticky goodness. Get the real stuff for the best flavor!

For the Topping

  • 1 cup chocolate chips, divided Use your favorites—semi-sweet, dark, or even peanut butter chips for a twist.

Preparation

  • Grab a mixing bowl and toss in your almond flour, melted coconut oil, and maple syrup. Mix until combined.
  • Fold in 1/4 cup of chocolate chips and mix until evenly distributed.
  • Line a small baking sheet or large plate with parchment paper and spread your cookie dough mixture into a large rectangle, about half an inch thick.
  • Melt the remaining 3/4 cup of chocolate chips in the microwave or a double boiler and pour over your cookie dough base, spreading evenly.
  • Chill in the freezer for at least one hour.
  • Once chilled, cut into squares or break into larger pieces and enjoy.

Notes

Store in the freezer wrapped tightly or in a sealed container for up to a month. Let soften slightly before indulging.
