Ingredients

Main Ingredients

  • 1 ripe peach (firm-ripe is ideal) Choose slightly firm but fragrant peaches for best results.
  • 1 tbsp powdered monk fruit (granulated sugar, coconut sugar, brown sugar) Use powdered monk fruit for low-carb option.
  • 1 tsp ground cinnamon Feel free to substitute with cardamom or pumpkin pie spice.
  • 1 tbsp butter, room temperature Can swap with coconut oil or vegan butter.
  • 1 light spray olive oil Prevents sticking and helps caramelize.
  • 1 scoop vanilla ice cream Serve warm as a topping.

Instructions

Preparation

  • Preheat your air fryer to 350°F (175°C).
  • Halve the peach and remove the pit. Lightly brush or spray the cut surfaces with olive oil.

Cooking

  • Place the peach halves cut side down in the air fryer basket and air fry for 6 minutes.
  • While the first side cooks, mix the butter, powdered monk fruit (chosen sugar), and cinnamon into a paste.
  • After 6 minutes, flip the peaches cut side up and dot the sugar-cinnamon butter into the peach hollows.
  • Air fry for an additional 4 minutes, until the peach juices are bubbling and the sugar-butter mixture is caramelized.
  • Remove carefully (juices will be hot) and serve immediately topped with a scoop of vanilla ice cream.

Notes

Add toasted chopped pecans or granola for texture. The dish can also be served with Greek yogurt and granola for a brunch alternative.
