Ingredients
  

Dry Ingredients

  • 2 cups almond flour Can substitute with coconut flour, but adjust liquid accordingly.
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol Or your preferred sugar substitute.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 4 large eggs Should be at room temperature.
  • 1/2 cup unsweetened almond milk Can substitute with any other milk.
  • 1 teaspoon alcohol-free vanilla extract

Instructions
 

Preparation and Mixing

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a large bowl, mix together the almond flour, unsweetened cocoa powder, erythritol, baking powder, and salt until well combined.
  • Add in the eggs, almond milk, and alcohol-free vanilla extract. Stir until the mixture is smooth and fully integrated.

Baking

  • Divide the batter evenly across the cupcake liners, filling them about three-quarters full.
  • Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cupcakes can be topped with whipped coconut cream or a chocolate glaze. They pair well with fresh berries for added flavor.
