Ingredients
  

For the spiced apple mixture

  • 2.00 medium medium apples, peeled, cored, and diced Use tart apples like Granny Smith for best flavor.
  • 0.33 cup water
  • 0.33 cup lemon juice Freshly squeezed is ideal.
  • 2.00 tsp alcohol-free vanilla extract
  • 1.00 tsp ground cinnamon
  • 1.00 tsp ground nutmeg
  • 2.00 tsp unsalted butter For cooking the apple mixture.

For the granola

  • 2.00 tbsp canola oil
  • 2.00 tsp stevia brown sugar blend Such as Truvia.
  • 2.00 tbsp almond butter or sunflower butter Can substitute with any nut or seed butter.
  • 0.25 cup quick cooking oats
  • 0.25 cup chopped walnuts
  • 0.25 cup shelled sunflower seeds
  • 1.50 tbsp whole flax seeds

For the parfait assembly

  • 2.00 cups plain nonfat Greek yogurt Can substitute with plant-based yogurt for a dairy-free option.
  • 1.00 tbsp zest of 1 lemon About 1 tablespoon.

Instructions
 

Preparation

  • Line a baking sheet with aluminum foil or parchment paper.
  • In a small bowl, whisk together the canola oil, stevia blend, and almond or sunflower butter until smooth. Set aside.
  • Coat a medium saucepan with nonstick cooking spray and heat over medium-low. Add oats, walnuts, sunflower seeds, and flaxseeds, toasting until fragrant (about 5 minutes). Transfer to a bowl to cool.
  • Add the oil mixture to the saucepan, bring to a boil, then reduce heat and whisk until slightly thickened (about 1 minute).
  • Stir in the toasted oat mixture and spread on the baking sheet to cool for about 10 minutes.

Cooking the Apples

  • In a medium bowl, whisk together water, lemon juice, vanilla, cinnamon, and nutmeg. Add diced apples and toss to coat.
  • In the same saucepan, melt butter over medium heat and add the apple mixture, cooking until slightly softened (about 5 minutes). Remove from heat and let cool slightly.

Assembly

  • Mix yogurt with lemon zest in a small bowl.
  • In parfait glasses, layer 1/4 cup of yogurt, 1/3 cup apple mixture, another 1/4 cup yogurt, and top with 1/4 cup granola.

Notes

Parfaits can be made ahead of time and stored in the refrigerator for up to three days, but it’s best to add the granola just before serving to keep it crunchy. Serve in clear glasses to showcase the layers, and consider garnishing with extra cinnamon or apple slices.
