Instructions

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and cook, stirring occasionally, until soft and translucent (about 6–8 minutes).
  • Stir in minced garlic and turmeric, cooking for 1–2 minutes until fragrant, without letting the garlic brown.
  • Pour in vegetable broth and scrape any browned bits from the pan.
  • Add the rinsed lentils, chickpeas, navy beans, and kidney beans. Raise to a boil.
  • Reduce heat to a simmer and cook, covered, for 20 minutes.

Cooking

  • Add the Persian noodles or linguine to the pot. Simmer for about 8–12 minutes until tender.
  • Stir in chopped spinach, cilantro, parsley, and dill. Cook another 5–7 minutes until the greens are wilted.
  • Season with salt and pepper to taste, adjusting acidity or salt if needed.
  • Ladle into bowls, topping each with sour cream or yogurt and fried onions.

Notes

Canned beans speed things up. Persian noodles are thin; linguine is a good alternative.
