Ingredients

Main ingredients

  • 2 tbsp Olive oil
  • 1 bunch Asparagus, chopped into bite-size pieces
  • 1 head Baby bok choy, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 cups Egg substitute Can be replaced with 10 large eggs
  • 0.67 cup Part-skim mozzarella, shredded
  • 0.67 cup Reduced-fat mozzarella, shredded

Instructions

Preparation

  • Preheat a large ovenproof skillet over medium heat.
  • Add the olive oil, followed by the asparagus, bok choy, salt, and pepper to the skillet. Cook, stirring occasionally, until the veggies soften, about 2–3 minutes.
  • In a large bowl, crack the eggs and whisk until well combined.
  • Preheat your oven to broil.

Cooking

  • Reduce the heat to low and pour the egg mixture into the skillet. Gently lift the cooked edges with a spatula until the sides are firm but the top remains runny, approximately 3–4 minutes.
  • Sprinkle the mozzarella cheeses over the frittata, then place the skillet in the oven. Broil until the top is set and the cheese has melted, about 1–2 minutes.
  • Slice into six equal pieces and serve warm.

Notes

For the best flavor, use fresh asparagus and bok choy. Customize with different vegetables or cheeses as desired.
