Ingredients

Main ingredients

  • 4 fillets cod fillets (about 4–6 oz each) skinless or skin-on with the skin removed after cooking if you prefer
  • 2 tablespoons olive oil (extra-virgin for flavor)
  • 2 cloves garlic, minced (or 1 teaspoon jarred garlic in a pinch)
  • 1 lemon, juiced (plus extra slices for serving; zest optional)
  • 1 teaspoon dried oregano (or 1 tablespoon finely chopped fresh oregano)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)

Instructions

Preparation

  • Preheat the oven to 400°F (200°C). Position a rack in the center.
  • In a small bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, and a pinch of salt and pepper until combined.
  • Arrange the cod fillets in a single layer in a baking dish. Pour the lemon-garlic mixture evenly over the fillets, turning them once so both sides get coated.

Cooking

  • Bake in the preheated oven for 15–20 minutes, depending on thickness. The fish is done when it flakes easily with a fork and reaches an internal temperature of 135–140°F (57–60°C).
  • Remove from the oven, garnish with chopped parsley, and serve with lemon slices.

Notes

If you don’t have cod, use haddock, pollock, or halibut. For richer flavor, dot each fillet with a small pat of butter before baking. This cod is versatile and pairs well with various sides like herbed quinoa, steamed vegetables, or garlic-roasted potatoes.
