Ingredients

Base

  • 2 tbsp unflavored grass-fed gelatin This is the main protein base; quality matters for texture.

Wet & Bloom

  • ½ cup cold water For blooming the gelatin so it dissolves without lumps.

Flavor + Boost

  • 1 cup lemon balm or green tea (hot) Pick lemon balm for calming vibes, green tea for a mild caffeine/metabolism nudge.

Brightener

  • 2 tbsp fresh lemon juice Adds brightness and helps digestion.

Sweetener & Seasoning

  • 1 tsp raw honey or monk fruit Optional; use honey for a little body, monk fruit for zero-calorie.
  • 1 pinch Himalayan pink salt Tiny salt brings out flavor and helps restore electrolytes.

Instructions

Bloom the gelatin

  • Sprinkle the 2 tablespoons of unflavored grass-fed gelatin over ½ cup cold water in a small bowl. Let it sit for about 5 minutes to absorb the water.

Heat the tea and add flavor

  • Warm 1 cup of your chosen tea until steaming but not boiling. Stir in 2 tablespoons fresh lemon juice, 1 teaspoon raw honey or monk fruit, and a pinch of Himalayan pink salt.

Combine hot with bloomed gelatin

  • Pour the hot tea mixture over the bloomed gelatin and whisk vigorously until completely dissolved.

Pour into molds and cool

  • Transfer the mixture into ramekins or silicone molds and let cool at room temperature for 10–15 minutes, then refrigerate.

Chill until firm

  • Refrigerate for at least 3–4 hours until firm.

Serve and enjoy

  • Enjoy a portion before meals or at bedtime to curb cravings and support bariatric routines.

Notes

Store covered in the refrigerator for up to 4-5 days. Freezing is not ideal as it can change the texture.
