Ingredients
  

For the Cupcake Base

  • 1 3/4 cups all-purpose flour This is your foundation!
  • 1 cup granulated sugar Sweetness makes the world go ’round.
  • 1/2 cup unsweetened cocoa powder Get that rich chocolate flavor.
  • 1 teaspoon baking powder To help ’em rise.
  • 1/2 teaspoon baking soda Extra lift, please!
  • 1/2 teaspoon salt Enhances all those delicious flavors.
  • 1/2 cup unsalted butter, melted Nice and smooth for mixing.
  • 2 large eggs Binding agents, bringing it all together.
  • 1 cup buttermilk Adds moisture and a little tang.
  • 1 teaspoon vanilla extract A warm hug in liquid form.

For the Fun Bat Center

  • 1/2 cup jam I recommend strawberry or raspberry for that fruity zing.
  • 1 cup Nutella Optional, but why not twist the knife a bit here?

For the Frosting

  • 1 cup chocolate ganache or chocolate frosting Create that spook-tacular look!

Instructions
 

Preparation

  • Go ahead and preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mix together melted butter, eggs, buttermilk, and vanilla extract.
  • Slowly add wet ingredients to dry mix and gently fold until just blended.
  • Fill each cupcake liner halfway with batter.
  • Drop a bit of jam or Nutella in the center of each cupcake.
  • Top them off with a bit more batter until the liners are about three-quarters full.

Baking

  • Pop the cupcakes in the oven and bake for 18-20 minutes.
  • Let them cool completely in the pan before moving them.
  • Once cooled, swirl chocolate ganache or frosting on top.

Serving

  • Gather your family and friends to enjoy the cupcakes!

Notes

Store in an airtight container at room temperature for 2-3 days or in the fridge/freezer for longer storage. Enjoy thawed or gently warmed.
