Ingredients

Main ingredients

  • 2 tablespoons fresh ginger, grated Or 1 tablespoon jarred ginger in a pinch
  • 1/4 cup soy sauce Use low-sodium if preferred
  • 2 tablespoons honey or sugar Honey adds depth; sugar is neutral
  • 2 tablespoons rice vinegar Substitute apple cider vinegar if needed
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil Or neutral oil like canola
  • to taste Salt and pepper

Instructions

Preparation

  • Peel and finely grate 2 tablespoons of fresh ginger. Place in a mixing bowl.
  • Add 1/4 cup soy sauce, 2 tablespoons honey (or sugar), and 2 tablespoons rice vinegar.
  • Pour in 1 tablespoon sesame oil and 1 tablespoon vegetable oil.
  • Whisk vigorously until everything is smooth and slightly emulsified.
  • Taste and season with salt and pepper — remember soy already adds salt, so go easy.
  • Drizzle over salad greens or use immediately as a dip or light marinade.

Notes

For gluten-free version, use tamari instead of soy sauce. For a thicker, creamy version, whisk in 2 tablespoons mayonnaise or silken tofu (vegan).
