Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (240 g)
  • 1.5 cups granulated sugar (300 g)
  • 0.75 cup unsweetened cocoa powder (75 g) — use Dutch-processed for deeper color and mellower chocolate
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 3 large eggs
  • 0.75 cup vegetable oil (180 ml) — neutral oil keeps crumb tender; melted butter can be used for richer flavor
  • 1 cup buttermilk (240 ml) — or 1 cup milk + 1 tbsp lemon juice, rest 5–10 minutes
  • 2 teaspoons alcohol-free vanilla extract
  • 0.5 cup hot water (120 ml) — boiling water blooms the cocoa for a velvety crumb

Blackberry Filling

  • 1.5 cups fresh or frozen blackberries (225 g)
  • 0.25 cup granulated sugar (50 g) for the filling
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)
  • 1 tablespoon lemon juice — brightens the filling

Whipped Cream

  • 1.5 cups heavy whipping cream (360 ml)
  • 0.25 cup powdered sugar (30 g)
  • 1 teaspoon alcohol-free vanilla extract

Garnishes

  • to taste fresh blackberries, edible flowers, dark chocolate shavings, cocoa powder for dusting

Instructions

Preheat and prepare pans

  • Heat the oven to 350°F (175°C). Grease and line two 8-inch or 9-inch cake pans with parchment. Set aside.

Mix dry ingredients

  • In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.

Mix wet ingredients

  • In another bowl, whisk eggs, vegetable oil, buttermilk, and vanilla until smooth.

Combine batter and add hot water

  • Pour the wet mixture into the dry. Stir gently until almost combined, then pour in hot water and mix to a smooth, pourable batter.

Bake

  • Divide batter evenly between prepared pans. Bake 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the cakes cool in pans 10 minutes, then invert onto a rack to cool completely.

Make the blackberry filling

  • In a small saucepan, combine blackberries and 1/4 cup sugar. Cook over medium heat until the berries release juices (3–5 minutes). Stir in the cornstarch slurry and lemon juice. Simmer until thickened, about 1–2 minutes. Transfer to a bowl and cool completely to room temperature, then chill.

Whip the cream

  • Using a chilled bowl and whisk or stand mixer, beat heavy cream, powdered sugar, and vanilla until stiff peaks form.

Assemble the cake

  • If layers dome, level them with a serrated knife. Place one layer on your cake plate. Spread all the blackberry filling evenly over it. Top with the second cake layer. Frost the top and sides lightly with whipped cream.

Garnish and chill

  • Decorate with fresh blackberries, edible flowers, dark chocolate shavings, and a light dusting of cocoa powder. Chill the assembled cake at least 1 hour to let flavors meld and make slicing cleaner.

Slice and serve

  • Use a sharp knife wiped between cuts for tidy slices. Serve chilled or at cool room temperature.

Notes

For better texture, bake layers a day ahead and whip cream just before assembly. Store in the fridge for optimum freshness.
