  • 2 large skinless, boneless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons avocado oil
  • 1 tablespoon butter
  • 1/2 medium onion, diced
  • 3/4 cup chicken broth
  • 1 (5.2oz) package Boursin Cheese
  • 2 tablespoons chopped parsley

Preparation

  • Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Use a meat hammer, rolling pin, or meat tenderizer to achieve even thickness.
  • Season both sides of the chicken with salt, pepper, garlic powder, and paprika.

Cooking

  • In a large skillet, heat the avocado oil and butter over medium-high heat.
  • Add the chicken to the skillet, searing for about 5-6 minutes per side or until cooked through (reaching an internal temperature of 150°F). Remove the chicken and transfer it to a plate to rest.
  • In the same skillet, add the diced onion and cook for about 5 minutes, or until softened and caramelized.
  • Pour in the chicken broth and add the Boursin cheese. Stir until the sauce becomes smooth and bubbly, allowing it to simmer for 5 minutes.
  • Return the chicken to the skillet, along with any juices from the plate, and let it simmer for an additional 1-2 minutes until the internal temperature reaches 155-160°F.
  • Serve the chicken topped with chopped parsley for an elegant finish.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, warm gently on the stovetop over low heat, adding a splash of chicken broth if necessary.
