Ingredients

Taquito Filling

  • 2 cups cooked, shredded chicken Rotisserie chicken is perfect
  • 1/2 cup buffalo sauce Use your favorite brand; Frank’s is a classic
  • 1 cup shredded cheese Cheddar for tang, mozzarella for melt

Wrapper

  • 8 small flour or corn tortillas Flour rolls easier; corn gives a heartier flavor
  • Cooking oil neutral oil for frying Like vegetable, canola, peanut

Dipping Sauce

  • to taste blue cheese or ranch dressing For dipping

Instructions

Preparation

  • In a bowl, combine the shredded chicken, buffalo sauce, and shredded cheese until evenly coated.
  • Lay a tortilla flat and spoon 2-3 tablespoons of the mixture across the center, leaving a small border.
  • Roll the tortilla snugly around the filling. If needed, secure with a toothpick through the seam.

Cooking

  • Pour about 1/4 inch of oil into a frying pan and warm over medium heat until shimmering but not smoking.
  • Fry the taquitos seam-side down first, turning so all sides are golden and crispy. Cook for about 3-4 minutes per batch.
  • Remove and set on paper towels to absorb excess oil. Pull out toothpicks before serving.

Serving

  • Plate hot with blue cheese or ranch for dipping.

Notes

Keep the oil at medium heat — too hot and the outside browns before the filling heats through; too cool and they absorb oil and get greasy. Can substitute turkey or shredded rotisserie chicken if preferred. For a healthier option, use low-fat cheese and bake instead of frying.
