  • 6-8 pieces boneless, skinless chicken thighs Thighs provide flavor and tenderness.
  • 1.5 cups grated or shredded parmesan cheese, divided Use the first cup for coating, reserve the rest for topping.
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup Caesar salad dressing Use your favorite store-bought or homemade dressing.
  • 0.33 cup sour cream Adds creaminess to the dish.

Preparation

  • Preheat your oven to 375 °F and coat a baking dish with cooking spray.
  • In a small bowl, combine 1 cup of parmesan cheese, salt, and black pepper.
  • Press each chicken thigh into the cheese mixture, coating both sides evenly.
  • Place the coated chicken in the prepared baking dish.
  • In another bowl, mix the Caesar dressing and sour cream until well combined and pour over the chicken.
  • Sprinkle the remaining parmesan cheese on top.

Baking

  • Bake in the oven for 25-30 minutes until the chicken reaches an internal temperature of 160 °F.
  • For a golden brown finish, turn the oven to broil for an additional 1-2 minutes, keeping a close eye to prevent burning.
  • Garnish with parsley and a bit of black pepper before serving.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Thaw and reheat in the oven or microwave when ready to eat.
