Ingredients
  

For the Ribs

  • 3 pounds beef ribs
  • to taste salt Generous amount for seasoning

Basting Mixture

  • 1 cup beef broth
  • 1 tablespoon apple cider vinegar Can experiment with different types of vinegar

Preparation

  • Season the ribs generously with salt on all sides. For a better bark, salt them an hour ahead and let them sit uncovered in the fridge.
  • Turn your pellet grill to smoke mode and allow it to run with the door open until the initial heavy smoke clears, which usually takes about 5 minutes.

Cooking

  • After 30 minutes, adjust the heat to 250 degrees and let the ribs cook for 2 hours.
  • Combine the beef broth and apple cider vinegar in a spray bottle or a small bowl. After 2 hours, spray or baste the ribs with this mixture until fully coated.
  • Continue cooking until the internal temperature reaches 195-203°F and the meat pulls easily away from the bones.

Notes

For serving, try plating the ribs on a large wooden board with fresh herbs, or serve alongside classic sides like coleslaw, corn on the cob, and baked beans. To store leftovers, allow the ribs to cool completely before transferring to an airtight container. They can be stored in the refrigerator for up to three days or frozen tightly for longer storage.
