Ingredients

Main Ingredients

  • 16 oz frozen cauliflower (defrosted and drained)
  • 1 lb lean ground beef
  • 2 cups shredded cheddar cheese

Seasonings

  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

Cooking

  • In a large skillet, brown the lean ground beef over medium heat until it’s cooked through (160°F / 71°C), then drain any excess grease.
  • Return the beef to the skillet and add the defrosted cauliflower along with garlic powder, salt, and pepper.
  • Stir and cook until the cauliflower is tender, roughly 5-7 minutes.
  • Sprinkle shredded cheddar cheese on top of the mixture, turn the heat to low, cover with a lid, and let it melt beautifully.

Serving Suggestions

  • Garnish with chopped green onions or fresh parsley for a pop of color. Serve with sautéed vegetables or a mixed green salad for freshness.
  • Enjoy with a dollop of sour cream or a sprinkle of hot sauce for extra flavor.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Freeze individual portions for longer storage. Reheat on the stove or microwave until warmed through.
