Main Ingredients

  • 1 small head grated cauliflower (about 3 cups) Ensure the cauliflower is freshly grated.
  • 1 large egg Can be substituted with a flax egg for a vegan option.
  • 3/4 cup shredded cheddar cheese Can be replaced with your favorite cheese variety.

Seasonings

  • 1/4 tsp cayenne pepper Optional for a bit of heat.
  • 1/4 tsp garlic powder
  • 1/2 tsp pink Himalayan salt
  • 1/8 tsp black pepper

Preparation

  • Grate the entire small head of cauliflower into a bowl using a cheese grater or food processor.
  • Microwave the grated cauliflower for 3 minutes and then allow it to cool.
  • Once cooled, wrap the cauliflower in paper towels or cheese cloth, and squeeze out all the excess moisture.

Mixing

  • In a larger bowl, combine the rung-out cauliflower with the egg, shredded cheddar cheese, cayenne pepper (if using), garlic powder, salt, and black pepper. Mix well.

Shaping and Cooking

  • Form the mixture into six square-shaped hash browns and place them on a greased baking tray.
  • Bake in a preheated oven at 400°F for 15-20 minutes, until golden brown.
  • Let them cool for 10 minutes to firm up, and then they are ready to serve.

Notes

For extra flavor, consider adding cooked turkey bacon bits, fresh herbs, different spices. Store leftovers in an airtight container in the fridge for up to 3 days, freeze for up to 2 months.
