Ingredients

For the Chicken

  • 1 lb Boneless, skinless chicken breasts or thighs, thin-cut or pounded to 1/2 inch For even cooking.
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder Optional for extra seasoning.
  • 1 tsp Paprika Optional for extra seasoning.
  • 1 cup All-purpose flour
  • 2 large Eggs, beaten
  • 2 cups Panko breadcrumbs For the best crunch.
  • 1/4 cup Neutral oil For frying, canola or vegetable oil.

For the Salad

  • 4 cups Romaine lettuce, washed and chopped
  • 1/2 cup Caesar dressing Homemade or store-bought with anchovy or Worcestershire for depth.
  • 1/2 cup Freshly grated Parmesan cheese

For Assembly

  • 4 pieces Soft sandwich rolls or ciabatta, split
  • 1 lemon Lemon wedges, optional For a final squeeze.

Instructions

Preparation

  • Pat each piece of chicken dry, then season both sides with salt, pepper, garlic powder, and paprika. Pound thick pieces to 1/2 inch.

Breading the Chicken

  • Dredge the chicken in flour, dip it in beaten egg, then press it into panko until well coated. Shake off excess.

Cooking the Chicken

  • For pan-frying: Heat 1/4-inch oil in a skillet over medium-high heat. Fry chicken for 3–4 minutes per side until golden and cooked through (internal temperature should reach 165°F). Drain on a rack or paper towels.
  • For oven-baking: Preheat oven to 425°F. Spray a baking sheet with oil. Bake for 12–15 minutes, flipping once, until crust is golden and chicken reaches 165°F.

Tossing the Salad

  • In a bowl, combine chopped romaine, Caesar dressing, and a generous grating of Parmesan. Toss lightly so leaves remain crisp.

Assembling the Sandwiches

  • Lightly toast the rolls. Place a bed of dressed romaine on the bottom bun, add the hot breaded chicken, sprinkle with extra Parmesan, add a squeeze of lemon if desired, and close with the top bun. Serve immediately.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat chicken in a 350°F oven for 8–10 minutes to restore crispness. Do not freeze dressed sandwiches as the greens will become soggy.
