  • 4 pieces boneless, skinless chicken breasts (about 4 oz each)
  • 1/3 cup finely crushed whole-grain crispbread Choose the lowest sodium available.
  • 1/3 cup shredded or grated parmesan cheese
  • 2 Tbsp minced fresh parsley
  • 1 tsp ground oregano
  • 1/4 tsp pepper
  • 1 large egg
  • 1 Tbsp water
  • 1 tsp olive oil
  • 1 cup homemade or low-carb marinara sauce
  • 1 cup shredded mozzarella cheese (low-fat or part-skim)

Preparation

  • Preheat your oven to 400°F (200°C) and spray a 13 x 9 x 2-inch baking dish with cooking spray.
  • In a shallow dish, whisk together the egg, water, and olive oil until well blended.
  • In another dish, combine the crushed crispbread, parmesan cheese, parsley, oregano, and pepper.
  • Dip each chicken breast into the egg mixture, ensuring it’s fully coated.
  • Press the chicken into the crispbread mixture, making sure it adheres nicely.
  • Place the coated chicken in your prepared baking dish.
  • Bake for 15–18 minutes until the chicken is no longer pink and the top is golden brown.
  • Remove from the oven and add a spoonful of low-carb marinara sauce atop each breast, then sprinkle generously with mozzarella cheese.
  • Return the dish to the oven for another 5–7 minutes, or until the cheese is melted and bubbly.

Notes

For the best experience, firmly press the crispbread mixture onto the chicken. You can add crushed red pepper flakes for a spicier kick. Experiment with fresh herbs like basil or thyme for a twist.
