Ingredients
  

Tortilla Preparation

  • 8 small Corn tortillas, cut into triangles
  • 2 tsp Olive oil, divided 1 tsp for tortillas, 1 tsp for sauce
  • 0.25 tsp Kosher salt

Vegetable and Sauce Ingredients

  • 1 small Yellow onion, diced
  • 1 clove Garlic, minced
  • 1 small Zucchini, diced
  • 0.5 tsp Ground cumin
  • 0.5 tsp Smoked paprika
  • 4 medium Roma tomatoes, chopped
  • 1 cup Low-sodium vegetable broth or water
  • 1 cup Canned crushed tomatoes, no salt added

Eggs and Garnish

  • 4 large Eggs Sunny-side-up
  • 1 can Nonstick cooking spray To spray the skillet
  • 0.25 cup Fresh cilantro, chopped For garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • Spread the tortilla triangles on a baking sheet, drizzle with 1 tsp olive oil, toss to coat, and sprinkle with salt.
  • Bake the tortilla triangles for 10-12 minutes until crispy and golden, flipping halfway through. Set aside.

Sauce Preparation

  • In a medium skillet, heat the remaining olive oil over medium heat.
  • Add the diced onion, minced garlic, zucchini, cumin, and smoked paprika. Cook until softened, about 3-4 minutes.
  • Add the chopped Roma tomatoes, vegetable broth, and crushed tomatoes. Let simmer until the sauce thickens slightly, about 8-10 minutes.
  • Optional: Mash or blend lightly for a smoother texture.

Cooking the Eggs

  • In a separate non-stick skillet over medium-low heat, spray lightly with cooking spray.
  • Crack the eggs into the skillet and cook until the whites are set and yolks remain runny, around 3-4 minutes. Remove from heat.

Assembly

  • Toss the baked tortilla chips in the skillet with the warm tomato sauce, ensuring they are well coated.
  • Divide the sauced chips among four plates, placing a sunny-side-up egg on top of each serving.
  • Garnish with chopped cilantro.

Notes

Chilaquiles can be served with toppings like avocado slices, crumbled cheese, or a drizzle of fresh lime juice for added flavor. Leftovers can be stored in an airtight container for up to three days; reheat in the oven to retain crispness.
