Chinese Chicken Salad

Salad Ingredients

  • 4 cups Napa Cabbage (finely shredded)
  • 1 cup Red Cabbage (finely shredded)
  • 1 cup Carrots (shredded)
  • 1/2 cup Green Onions (chopped)
  • 1/2 cup Fresh Cilantro (chopped)
  • 2-3 cups Chicken (shredded) Use grilled, poached, or rotisserie chicken.
  • 1 tablespoon Sesame Oil
  • 3 tablespoons Soy Sauce
  • 3 tablespoons Rice Vinegar
  • 4 teaspoons Avocado or Vegetable Oil
  • 3 teaspoons Ginger (grated)
  • 3 cloves Garlic (minced)
  • 2 teaspoons Sugar (or your fave sugar substitute)
  • 1 cup Crispy noodles or slivered almonds
  • to taste Sesame Seeds Best toasted for added flavor.

Instructions
 

Preparation

  • In a salad shaker or small bowl, mix together the soy sauce, rice vinegar, sesame oil, avocado oil, ginger, garlic, and sugar until well combined.
  • In a large bowl, combine the Napa cabbage, red cabbage, carrots, green onions, cilantro, and shredded chicken. Toss well to ensure an even mix.
  • Drizzle half of the prepared dressing over the salad and toss together. Before serving, taste and add more dressing if desired.
  • Top with sesame seeds and crispy noodles (or slivered almonds), then enjoy!

Notes

To keep the salad fresh, store in an airtight container in the refrigerator. Best enjoyed within 3 days. Keep the dressing separate until ready to serve to maintain crunchiness.
