  • 2 large Cucumbers (English/Continental)
  • 3 cloves Garlic (finely chopped)
  • ¼ cup Sesame Oil
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Tamari Sauce
  • 1 teaspoon Sukrin Gold
  • ½ teaspoon Sichuan Pepper (ground)
  • ½ teaspoon Coriander (ground)
  • ½ teaspoon Cumin (ground)
  • to taste Salt
  • 1 teaspoon Sesame Seeds (toasted) For garnish

Preparation

  • Start by halving the cucumbers lengthwise and cutting them into thick slices. Place the cucumber pieces into a large bowl.
  • In a separate bowl, mix the chopped garlic, sesame oil, rice vinegar, tamari sauce, Sukrin Gold, Sichuan pepper, coriander, cumin, and salt to create the dressing.
  • Pour the dressing over the cucumbers and mix well to ensure every piece is coated.
  • Cover the bowl and allow the salad to marinate in the refrigerator for at least 3 hours to enhance the flavors.
  • Before serving, sprinkle the toasted sesame seeds on top for an added crunch.

Notes

Store in an airtight container in the refrigerator and consume within 2-3 days for best quality. For maximal flavor, let it marinate overnight.
