Ingredients

For the sauce

  • 2 cans diced tomatoes with basil, oregano, and garlic, undrained (14-1/2 ounces each)
  • 2 tablespoons olive oil, divided
  • 2 medium onions, halved and thinly sliced (about 1-1/2 cups)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes

For the cod and serving

  • 4 fillets cod (6 ounces each)
  • Hot cooked serving whole wheat pasta Can substitute with another pasta option
  • to taste minced fresh parsley optional for garnish

Instructions

Preparation

  • Begin by placing the tomatoes in a blender. Cover and process until smooth.
  • Pat the fish dry with paper towels.

Cooking

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the cod fillets and cook until the surface begins to color, about 2-4 minutes on each side. Then, remove from the pan.
  • In the same skillet, heat the remaining oil over medium-high heat. Introduce the sliced onions and sauté until tender, roughly 2-4 minutes.
  • Incorporate the oregano, pepper, crushed red pepper flakes, and pureed tomatoes. Bring the mixture to a boil.
  • Return the cod to the sauce, bringing it just to a boil again, and spoon sauce over the fish.
  • Reduce the heat and let it simmer uncovered until the fish easily flakes with a fork, approximately 5-7 minutes.

Serving

  • Serve the dish hot over whole wheat pasta, garnished with minced parsley if desired.

Notes

For the best results, ensure your pan is adequately heated before adding the fish. Experiment with additional herbs or spices to suit your taste preferences.
