  • 2 large large chicken breasts, halved horizontally
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1/2 cup grated parmesan cheese Use fresh Parmesan for a richer flavor.
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped For garnish.

Cooking Steps

  • Season both sides of the chicken breast halves with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the chicken for about 5 to 7 minutes on each side until golden brown and fully cooked. Remove the chicken and place it on a plate.
  • In the same skillet, add sliced mushrooms and sauté for approximately 5 minutes until browned and moisture evaporates.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Pour in chicken broth to deglaze the pan, scraping off any browned bits.
  • Lower heat to medium and mix in heavy cream, grated Parmesan cheese, dried oregano, and red pepper flakes. Simmer for 3 to 5 minutes until thickened.
  • Return the chicken to the skillet, spooning the sauce over the meat.
  • Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove over low heat.
