Creamy Low-Carb Tuscan Chicken

Ingredients
  

Chicken and Vegetables

  • 1 lb boneless, skinless chicken breasts
  • 2 cups broccoli, chopped Fresh or frozen can be used.
  • 1 cup grape tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced

Sauce Ingredients

  • 1 cup heavy cream Can substitute with half-and-half or non-dairy cream.
  • 2 teaspoons Italian seasoning
  • 1/2 cup Parmesan cheese, shredded Can swap with mozzarella for variety.
  • 2 tablespoons olive oil
  • to taste salt and pepper Be cautious due to the saltiness of Parmesan.

Instructions
 

Cooking the Chicken

  • In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, and add them to the skillet. Cook for about 5-7 minutes on each side until they are golden and cooked through. Once done, remove from the skillet and place on a plate to rest.

Sautéing the Vegetables

  • In the same skillet, toss in the minced garlic and broccoli. Sauté for about 3 minutes until the garlic is fragrant and the broccoli starts to soften.
  • Add the halved grape tomatoes and chopped sun-dried tomatoes. Let them cook for an additional 2-3 minutes, allowing the grapes to burst and release their sweet juices.

Making the Sauce

  • Slowly whisk in the heavy cream and Italian seasoning. Stir gently until the sauce thickens slightly, about 2 minutes.
  • Return the chicken to the skillet, ensuring it’s well-coated with the creamy sauce and veggies. Let everything simmer together for another 3 minutes.

Serving

  • Finally, sprinkle the dish with shredded Parmesan, allowing it to melt into the creamy goodness before serving.

Notes

This dish pairs wonderfully with cauliflower rice, zucchini noodles, or a light garden salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to a month after cooling. Reheat gently on the stove over low heat.
