  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 can green chilies (4 oz), undrained
  • 2 cups chicken broth
  • 2 cups heavy cream Lower-fat versions can be used, but soup may be less rich.
  • 8 oz cream cheese, cubed
  • 2 cups shredded cheddar cheese Experiment with different cheese types for varied flavors.
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Cooking Instructions

  • In a large pot, cook the ground beef over medium heat until browned; drain any excess fat.
  • Add the diced onion and minced garlic. Sauté until softened, about 3-5 minutes.
  • Stir in the undrained diced tomatoes, green chilies, chicken broth, and cumin. Bring the mixture to a boil.
  • Reduce the heat and let it simmer for 10 minutes.
  • Gradually add in the heavy cream and cream cheese, stirring until the cheese is melted and the soup is smooth.
  • Mix in the shredded cheddar cheese and continue to stir until melted.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

Pair with crispy tortilla chips for dipping, warm bread, or a fresh salad to balance the richness. For more variations, consider adding black beans, corn, or different spices.
