Ingredients

Main Ingredients

  • ½ cup shredded cheddar cheese sharp is best for flavor; pre-shredded is fine
  • ½ cup shredded mozzarella cheese for melt and stretch
  • ¼ cup finely chopped dill pickles pat dry with a paper towel to avoid extra moisture
  • ½ teaspoon garlic powder
  • 1 tablespoon breadcrumbs optional — use panko for extra crunch or omit for lower carbs

Equipment

  • 1 piece Nonstick spray or parchment paper parchment helps with easy removal

Instructions

Preparation

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment or mist it with nonstick spray.
  • In a mixing bowl, combine the cheddar, mozzarella, chopped pickles, garlic powder, and breadcrumbs (if using). Stir until evenly mixed.
  • Use a teaspoon or small cookie scoop to form bite-sized balls. Gently press them so they hold their shape; they will flatten slightly while baking. Space them about 1–1½ inches apart on the prepared sheet.

Baking

  • Bake for about 10 minutes, watching for golden edges and crisp texture. Ovens vary, so check at 8 minutes if your oven runs hot.
  • Remove from the oven and let the bites cool on the baking sheet for 3–5 minutes.
  • Serve warm or at room temperature.

Notes

Store cooled leftovers in an airtight container for up to 3 days. Re-crisp in a 350°F (175°C) oven for 5–7 minutes. Arrange cooled bites on a baking sheet to flash-freeze for 1 hour, then transfer to a freezer bag for up to 1 month.
