Ingredients

Batter

  • 1 cup all-purpose flour
  • 2 cups dashi stock Substitute with chicken broth if needed.
  • 1 large egg egg Room temperature
  • 1/2 tsp baking powder
  • 1 tbsp soy sauce

Fillings and Toppings

  • 1/2 cup cooked and diced octopus (about 100 g)
  • 2 stalks green onions Finely sliced
  • 2 tbsp pickled ginger (beni shoga) Chopped (optional)
  • 1/4 cup tempura scraps (tenkasu) (optional)
  • 1/4 cup takoyaki sauce Store-bought or homemade
  • 2 tbsp Japanese mayonnaise (Kewpie recommended)
  • 2 tbsp dried bonito flakes (katsuobushi)
  • 1 tbsp aonori seaweed flakes

Instructions

Preparation

  • In a mixing bowl, whisk together the flour, baking powder, and soy sauce.
  • Slowly pour in the dashi stock while whisking to prevent lumps. The batter should be smooth.
  • Crack in the egg and mix until incorporated. Aim for a thin batter, slightly thicker than heavy cream. Rest for 5 minutes.
  • Prepare fillings by dicing the cooked octopus, slicing the green onions, chopping pickled ginger, and having tempura scraps ready.

Cooking

  • Heat the takoyaki pan over medium and brush each mold generously with oil. Warm until hot but not smoking (2–3 minutes).
  • Fill each mold about 3/4 full with batter — a little overflow is okay.
  • Drop one piece of octopus into each mold, add a pinch of green onion, a touch of pickled ginger, and a few tenkasu bits.
  • Let the batter set for 1–2 minutes until the edges firm. Use takoyaki picks or skewers to turn each ball 90 degrees. If gaps appear, pour a bit more batter to shape a full sphere.
  • Keep turning each ball every 1–2 minutes so they brown evenly. Total cooking time is about 8–10 minutes until golden and crisp.
  • Transfer hot takoyaki to a plate. Drizzle with takoyaki sauce and Japanese mayo, then sprinkle with bonito flakes and aonori. Serve immediately.

Notes

Serve takoyaki hot for the best texture. Store leftovers in an airtight container for up to 2 days. Freeze cooled takoyaki for up to 1 month. Reheat on oven rack or skillet for crispness.
