Ingredients

For the Chicken

  • 4 pieces boneless, skinless chicken breasts

For the Sauce

  • 1 cup sundried tomatoes in oil, drained and chopped
  • 1 cup heavy cream For a lighter version, substitute half-and-half.
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • to taste salt Use fresh ground black pepper to taste.
  • to taste freshly ground black pepper

For Garnish

  • Parmesan cheese For garnish.
  • Fresh basil For garnish.

Instructions

Preparation

  • Combine the sundried tomatoes, heavy cream, chicken broth, Italian seasoning, salt, and pepper in your slow cooker. Stir to blend.
  • Add the chicken breasts, pressing them into the sauce so each piece is well coated.
  • Cover and cook on LOW for 6–8 hours, or on HIGH for 3–4 hours, until the chicken is fork-tender and reaches 165°F (74°C).
  • Before serving, stir the sauce to fully combine any separated cream and tomatoes. Taste and adjust seasoning.
  • Garnish with grated Parmesan and torn fresh basil. Serve the chicken over cauliflower rice or with roasted vegetables and spoon extra sauce on top.

Notes

For a richer gravy-style serving, pair with a slow-cooked base like classic comfort gravy. Store leftovers in an airtight container for 3–4 days, or freeze for up to 3 months.
