Crockpot Coconut Lime Chicken

  • 4 pieces boneless, skinless chicken breasts (about 1.5–2 lbs) Chicken thighs can be used for more fat and deeper flavor; increase cook time slightly if frozen.
  • 1 can coconut milk (13.5 oz, full-fat for creamier sauce; light works too) Light coconut milk reduces richness; full-fat yields a creamier sauce.
  • 2 tablespoons lime juice (about 2 limes) Add more for a brighter lime flavor.
  • 1 piece lime zest Stir in an extra teaspoon after shredding for more flavor.
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste Taste and adjust as necessary.
  • Fresh cilantro, chopped, for garnish
  • Cauliflower rice, steamed, for serving (optional) Serve over cauliflower rice to keep the carbs low.

Instructions
 

Preparation

  • Place the chicken breasts in an even layer in the bottom of the crockpot.
  • In a medium bowl, whisk together the coconut milk, lime juice, lime zest, garlic powder, and a generous pinch of salt and pepper until combined.
  • Pour the coconut-lime mixture over the chicken, turning breasts once so they’re coated.

Cooking

  • Cover and cook on low for 6–8 hours, or on high for 3–4 hours, until the chicken reaches 165°F (74°C), is tender and shreds easily.
  • Use two forks to shred the chicken directly in the crockpot. Stir the shredded meat into the sauce so it soaks up the flavors.
  • Taste and adjust seasoning with salt, pepper, or a squeeze more lime if needed. Serve hot over cauliflower rice and garnish with chopped cilantro.

Notes

This dish is naturally gluten-free and can be kept dairy-free. Ideal for meal prep and leftovers. For added heat, include jalapeño or red pepper flakes.
