Ingredients

Mug Cake Ingredients

  • 1 piece egg
  • 1 tbsp Greek yogurt (plain)
  • 1.5 tbsp almond milk (unsweetened)
  • 1 tsp maple syrup
  • 0.25 tsp alcohol-free vanilla extract
  • 1 tbsp coconut flour
  • 1 tbsp cocoa powder (unsweetened)
  • 0.25 tsp baking powder
  • 1 pinch salt
  • 0.5 tbsp peanut butter (for drizzling on top)
  • 1 pinch cinnamon (optional topping)

Instructions

Preparation

  • In a mug or small bowl, whisk together the egg, Greek yogurt, almond milk, maple syrup, and alcohol-free vanilla extract until smooth.
  • Add in the coconut flour, cocoa powder, baking powder, and salt. Stir until everything is well combined.
  • Let the mixture sit for 30-60 seconds to allow the coconut flour to absorb some moisture.
  • Microwave the mug cake for 60-90 seconds, until it puffs up and the center is just set.
  • Allow it to cool for a minute, then enjoy as-is or add a drizzle of peanut butter and a sprinkle of cinnamon.

Notes

Serve topped with whipped cream, ice cream, fresh berries, or chopped nuts. It’s best served fresh but can be stored in the fridge for up to a day. Reheat in the microwave before enjoying.
