  • 1 tablespoon lemon juice Freshly squeezed for best flavor.
  • 1/2 cup almond flour Can be substituted with a gluten-free flour.
  • 1/4 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a blender, add the cottage cheese, eggs, sugar substitute, alcohol-free vanilla extract, and lemon juice. Blend until you achieve a smooth consistency.
  • In a separate mixing bowl, combine the almond flour and salt.
  • Pour the blended cottage cheese mixture into the bowl with the almond flour, mixing until fully integrated.
  • Carefully pour the mixture into a greased springform pan.
  • Bake in your preheated oven for 45-50 minutes or until the cheesecake is set.
  • Allow it to cool before serving for the best results.

Notes

Serve with fresh fruits like berries or a dollop of sugar-free whipped cream. You can also sprinkle with cinnamon or nutmeg for added flavor. Store leftovers in an airtight container for up to five days or freeze slices wrapped tightly in plastic wrap and then in foil for up to three months.
