Ingredients
  

For the nachos

  • 2 cups shredded chicken rotisserie chicken works great
  • 1 cup low carb tortilla chips
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños optional for extra spice
  • 1/2 cup fresh guacamole
  • 1/4 cup Greek yogurt as a sour cream substitute
  • 1/4 cup diced red onions
  • 1/4 cup sliced black olives
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • Spread the low carb tortilla chips on a baking sheet evenly.
  • Layer the shredded chicken generously over the chips.
  • Sprinkle the shredded cheese on top of the chicken, making sure to cover it well.
  • Next, add the diced tomatoes, jalapeños, and red onions.
  • Bake in the preheated oven for about 10-15 minutes, or until the cheese is perfectly melted and bubbly.
  • Once out of the oven, top your creation with fresh guacamole and dollops of Greek yogurt.
  • Finally, garnish with sliced black olives and get ready to serve immediately.

Notes

These nachos can be paired with a light salad or veggie sticks for added crunch. Leftovers can be stored in an airtight container for up to three days and reheated in the oven.
