  • 1 cup brown rice Can substitute with quinoa or farro.
  • 2 cups vegetable broth or water Use per package instructions.
  • 2 tablespoons olive oil For sautéeing.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 medium onion, chopped Sauté until fragrant.
  • 1 teaspoon cumin, or spices of choice Add for flavor.
  • fresh vegetables (bell peppers, zucchini) Add during last 10 minutes of cooking.
  • to taste salt and pepper
  • optional protein (chicken or legumes) To add sustenance.

Instructions
 

Preparation

  • Rinse the brown rice under cold water until the water runs clear.
  • In a medium pot, heat olive oil over medium heat. Add minced garlic and chopped onions, sauté until fragrant (about 2-3 minutes).

Cooking

  • Add the rinsed rice, stirring it in with the garlic and onions for about a minute.
  • Pour in vegetable broth or water based on package instructions (typically 2 cups of liquid for every cup of rice).
  • Season with spices, salt, and pepper.
  • Bring to a boil, cover, and reduce to a simmer. Cook until rice is tender (about 45 minutes).
  • Stir in fresh vegetables during the last 10 minutes of cooking for added flavor and nutrition.
  • If desired, add cooked protein for extra sustenance.
  • Fluff the rice with a fork before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to a month. Reheat with a splash of water to maintain moisture.
