Ingredients

For the marinade

  • 2 tablespoons olive oil Can be swapped for avocado oil.
  • 2 tablespoons Dijon mustard Use a good-quality Dijon for best flavor.
  • 3 cloves garlic, minced Or use 1/2 teaspoon garlic paste.
  • 1 tablespoon honey For a lower-sugar option, use 1 teaspoon honey or a sugar-free honey substitute.
  • Salt and freshly ground black pepper, to taste

For the salmon

  • 4 pieces salmon fillets (about 6 oz each; skin-on or skinless)
  • 1 lemon wedges, for serving

Instructions

Preparation

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • In a small bowl, whisk together the olive oil, Dijon mustard, minced garlic, honey, a pinch of salt, and several grinds of black pepper until smooth. Adjust to taste.
  • Pat the salmon fillets dry with a paper towel and place them skin-side down on the prepared sheet.
  • Brush the Dijon-honey mixture generously over the top of each fillet.

Cooking

  • Slide the pan into the preheated oven and bake for 15-20 minutes, depending on the thickness of the fillets. The fish is ready when it flakes easily with a fork.
  • Remove from the oven and let rest for 2-3 minutes.
  • Serve immediately with lemon wedges.

Notes

For a restaurant-style finish, drizzle with extra-virgin olive oil and scatter microgreens or dill on top before serving. Store in the refrigerator or freeze for later use.
