Ingredients

Wet Ingredients

  • ½ cup almond butter (unsweetened)
  • 3 tbsp maple syrup
  • ½ tsp alcohol-free vanilla extract

Dry Ingredients

  • ¼ cup oat flour
  • 3 tbsp additional oat flour Use as needed for dough consistency
  • 1 tbsp flaxseed (ground)
  • ¼ tsp cinnamon (ground)
  • 1 pinch sea salt

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the almond butter, maple syrup, and alcohol-free vanilla extract until smooth.
  • Add the oat flour, flaxseed, cinnamon, and salt, then stir until the dough comes together. If it feels too soft, gradually add more oat flour until it’s manageable.
  • Scoop about 1 tablespoon of dough per cookie, roll into balls, and place them on the baking sheet.
  • Flatten slightly using a fork or your fingers, as they won’t spread much during baking.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let them cool on the baking sheet for at least 5 minutes before transferring to a wire rack.

Notes

For a nut-free version, substitute almond butter with sunflower seed butter. Store cookies in an airtight container at room temperature for about a week or freeze for up to three months.
