Ingredients

Main Ingredients

  • 1 cup frik (cracked wheat) Also labeled freekeh sometimes
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 medium tomatoes, chopped Or 1 cup canned diced tomatoes
  • 1 bunch parsley, chopped
  • 1 tablespoon tomato paste
  • 6 cups vegetable or chicken broth Use low-sodium if preferred
  • 1 tablespoon olive oil
  • to taste salt and freshly ground black pepper

Instructions

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté, stirring occasionally, until translucent (about 5–7 minutes).
  • Add the diced carrots and cook 3–4 minutes until they begin to soften.
  • Stir in the chopped tomatoes and the tomato paste. Cook, stirring, until the mixture reduces and thickens slightly (about 5–6 minutes).

Cooking

  • Add the frik and pour in the broth. Turn the heat up to bring the pot to a boil.
  • Reduce the heat to a low simmer and cover partially. Cook for about 30 minutes, stirring occasionally, until the frik is tender and has absorbed some liquid.
  • Season with salt and pepper to taste. Remove from heat and stir in the chopped parsley just before serving.

Notes

If the soup thickens too much as it sits, loosen it with a splash of hot broth or water when reheating. Serve hot with a drizzle of olive oil and a lemon wedge for brightness.
