  • 1 tsp kosher salt, divided
  • ¼ tsp black pepper
  • 2 Tbsp unsalted butter, divided Melted for cooking

For the Steak

  • 1.5 lbs boneless sirloin steak, cut into one-inch cubes
  • 4 cloves garlic, minced Enhances flavor
  • ½ tsp fresh thyme, chopped
  • 2 Tbsp chopped parsley, optional For garnish

Instructions

Cooking the Potatoes

  • Preheat the oven to 325 degrees Fahrenheit.
  • Melt 2 tablespoons of butter in a large oven-safe skillet over medium-high heat.
  • Add the potatoes along with onion powder, a portion of salt, and pepper. Stir to coat and place cut-side down.
  • Let the potatoes sizzle until they start to deepen in color, continuing to cook and stir until they brown and begin to soften.
  • Turn off the heat, move the potatoes to a baking sheet, spread them out, and slide them into the oven to keep cooking evenly.

Cooking the Steak

  • Wipe out the skillet and melt another tablespoon of butter.
  • Add the steak cubes in a single layer and season with the rest of the salt.
  • Let them sear without moving too much until most sides are browned.
  • Reduce heat to low and stir in the remaining butter, garlic, and thyme. Turn off the heat when the garlic becomes aromatic.
  • Bring the potatoes back to the skillet and toss everything together. Sprinkle with parsley if desired.

Notes

For a stronger sear, ensure the skillet is hot before adding the steak. Potatoes can be prepped earlier in the day for quicker cooking at dinner time. If desired, smoked paprika can enhance the potato flavor.
