  • 1/4 cup soy sauce Use low-sodium if you're watching salt.
  • 1/4 cup rice vinegar White rice vinegar or seasoned rice vinegar both work; adjust sweetness.
  • 1/4 cup vegetable oil Neutral oil like canola or grapeseed; olive oil will change flavor.
  • 2 tablespoons freshly grated ginger Fresh has brightness powdered lacks.
  • 1 tablespoon honey or granulated sugar Honey adds depth; sugar keeps it vegan.
  • 1 teaspoon sesame oil Toasted sesame oil — use sparingly for aroma.
  • 1 clove garlic, minced Or 1/2 teaspoon garlic paste.
  • Salt and pepper to taste

Preparation

  • Peel and finely grate fresh ginger into a small bowl.
  • Mince one garlic clove.
  • Add soy sauce and rice vinegar to the bowl.
  • Pour in vegetable oil and toasted sesame oil.
  • Stir in honey or sugar until it dissolves.
  • Whisk vigorously until the dressing is glossy and slightly emulsified.
  • Taste and season with salt and freshly ground black pepper as needed.
  • Let rest for 5–10 minutes to let the flavors meld before serving.

Notes

To keep it vegan, choose sugar instead of honey. For a lighter dressing, replace half the oil with water or green tea. If you prefer less bite, reduce ginger to 1 tablespoon.
