Ingredients

Main Ingredients

  • 1 cup unsalted butter (softened) or use salted butter and omit extra salt.
  • 2 cups granulated sugar for a shiny crackly top; brown sugar will make them chewier.
  • 2 large eggs room temperature if possible.
  • 2 teaspoons alcohol-free vanilla extract for depth of flavor.
  • 1 cup all-purpose flour can substitute 1:1 gluten-free blend.
  • 1 cup cocoa powder unsweetened; Dutch-processed for a darker flavor.
  • 1/2 teaspoon salt balances the chocolate.
  • 1 cup chocolate chips use semisweet, milk, or a mix.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until smooth and slightly fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla until evenly combined.
  • In a separate bowl, whisk the flour, cocoa powder, and salt to remove lumps.
  • Gradually add the dry mixture to the wet ingredients and mix gently until just combined — don’t overwork the batter.
  • Fold in the chocolate chips with a spatula.
  • Drop rounded spoonfuls (about 1 to 1 1/2 tablespoons) of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10–12 minutes, until the edges are set but the centers look slightly soft.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling.

Notes

Serve warm with vanilla ice cream, powdered sugar, or salted caramel. Store in an airtight container for up to 3 days.
