Ingredients

Filling Ingredients

  • 1 pound lean ground beef (90 percent lean) Use lean beef for a healthier option.
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can chopped green chiles (4 ounces)
  • 1/4 cup salsa
  • 1/4 teaspoon ground cumin

Chimichanga Assembly

  • 6 whole wheat tortillas (8 inches)
  • 3/4 cup shredded Monterey Jack cheese
  • to taste Reduced fat sour cream and guacamole for serving Optional garnishes.

Instructions

Preparation

  • In a large skillet, cook the beef, onion, and garlic over medium heat for 6 to 8 minutes until the beef is no longer pink and the onion is tender, breaking up the beef into crumbles as it cooks. Drain the excess fat.
  • Stir in the chopped green chiles, salsa, and cumin into the beef mixture.
  • Spoon 1/2 cup of the beef mixture across the center of each tortilla. Top each with 2 tablespoons of shredded cheese.
  • Fold the bottom and sides of each tortilla over the filling and roll up tightly.

Grilling

  • Place the chimichangas seam side down on your grill rack. Grill them, covered, over medium-low heat for 10 to 12 minutes until they are crisp and browned, turning them once during grilling.
  • Serve your chimichangas with reduced fat sour cream and guacamole if desired.

Notes

For the best texture, don't rush the grilling process. Feel free to add jalapeños for extra spice or experiment with different cheeses.
