Ingredients

Main ingredients

  • 4 pieces tortillas Flour tortillas work best for folding; use large burrito-size for a fuller roll.
  • 2 cups shredded cheese Cheddar, mozzarella, a blend. Low-moisture cheddar is preferred for better melt.
  • 1 tablespoon butter Room temperature and soft enough to spread.

Optional add-ins

  • 1 cup cooked chicken Additional ingredients such as sautéed vegetables, salsa, cooked turkey bacon, scrambled eggs can be included.

Instructions

Preparation

  • Grate your cheese and preheat a skillet to medium.
  • Spread a thin layer of butter on one side of a tortilla.
  • Place the tortilla butter-side down in the skillet so the butter contacts the pan.

Cooking

  • Sprinkle about 1/2 cup of shredded cheese in the center of the tortilla, leaving room at the edges. Add any pre-cooked fillings now.
  • Fold the tortilla over itself to form a compact burrito shape, tucking edges as you go so fillings stay inside.
  • Cook for 3–4 minutes on the first side until golden brown. Flip and cook another 3–4 minutes until the second side is golden and the cheese is fully melted.
  • Remove from the skillet and let rest for 1–2 minutes to set. Slice in half on the bias.

Notes

Use reduced-fat cheese or a 50/50 blend of cheese and cooked veggies for a lighter option. Gluten-free tortillas or wraps work fine if needed.
