A delicious and easy weeknight dinner featuring zucchini halves stuffed with a savory mixture of ground beef, garlic, and marinara, topped with melted cheese.

Ingredients
  

Main Ingredients

  • 2 medium zucchini Firm zucchini without large size
  • 1 pound ground beef Can substitute with turkey or meat substitute
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup marinara sauce
  • 1 cup shredded cheese (mozzarella or cheddar) Optional variations include pepper jack or feta

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchini in half lengthwise and carefully scoop out the centers with a spoon.

Cooking

  • In a skillet over medium heat, brown the ground beef, adding the chopped onion and minced garlic until the onion is softened.
  • Mix in the Italian seasoning, marinara sauce, and season with salt and pepper to taste.
  • Generously spoon the beef mixture into each hollowed zucchini half.
  • Sprinkle shredded cheese over the top of each filled boat.
  • Arrange the zucchini in a baking dish and bake for 25-30 minutes or until the zucchini is tender and the cheese is melted.
  • Enjoy warm!

Notes

For best results, use firm zucchini and experiment with spices. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for longer storage.
