Ingredients

For the Creamy Base

  • 8 oz cream cheese, softened to room temperature (full-fat gives the best mouthfeel)
  • 1 cup powdered sugar (adjust to taste; start with less if your fruit is very sweet)
  • 1 tsp alcohol-free vanilla extract
  • 8 oz whipped topping (like Cool Whip, thawed — or 1 1/2 cups homemade stabilized whipped cream)

For the Fruit

  • 1 can (20 oz) crushed pineapple, well drained (reserve a tablespoon of juice if you want to loosen the mix later)
  • 1 can (11 oz) mandarin oranges, drained

Optional Add-ins

  • 1 cup mini marshmallows (optional — classic touch)
  • 1/2 cup shredded sweetened coconut (optional)
  • 1/2 cup chopped pecans or macadamia nuts (optional for crunch)
  • 1 prepared graham-cracker crust (optional, if making bars or cheesecake-style salad)

Instructions

Preparation

  • Beat the softened cream cheese until smooth using a hand mixer or stand mixer. Scrape the bowl so no lumps remain.
  • Add powdered sugar and vanilla. Beat until fully incorporated and silky.
  • Gently fold in the whipped topping by hand to keep the mixture light and airy.
  • Fold in the drained crushed pineapple and mandarin oranges. If adding marshmallows, coconut, or nuts, fold them in now.
  • Transfer the mixture to a serving bowl or into the prepared graham-cracker crust if making bars. Smooth the top.
  • Refrigerate for at least 2 hours, preferably 4, to let the salad set and flavors meld.

Serving

  • Before serving, garnish with extra coconut, chopped nuts, or a few mandarin slices for color.

Notes

Store in an airtight container for up to 3-4 days. Not recommended for freezing as it alters texture. For best texture, use room temperature cream cheese and drain fruit thoroughly.
