  • 1.5 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons pickle juice (from the jar)
  • 1/4 teaspoon cayenne pepper

Instructions

Preparation

  • Preheat your oven broiler on high. Line a baking sheet with foil or parchment.
  • Slice the Hawaiian roll pack horizontally so you have one connected top and one connected bottom.
  • Place the cut sides up on the prepared baking sheet.
  • Melt 4 tablespoons butter. Brush the inside (cut) sides of all the rolls with the butter.
  • Broil the rolls for 3–4 minutes until golden; watch closely to prevent burning.
  • Lower oven temperature to 350°F (175°C).

Cooking the Beef

  • In a large bowl, add the ground beef, 1 teaspoon salt, and 1 teaspoon cracked pepper. Mix gently until combined.
  • Press the seasoned beef evenly into a greased 9×13-inch casserole dish to form one flat slab.
  • Bake the beef slab at 350°F for 20 minutes.

Sautéing Onions

  • While the beef bakes, heat 1 tablespoon butter in a skillet over low heat.
  • Add the diced onion and cook slowly, stirring occasionally, until browned and sweet, about 15 minutes.

Assembling the Sliders

  • Once the beef is done, drain excess fat and discard the pan juices if needed.
  • Arrange the bottom half of the toasted buns on a baking sheet and place a layer of pickles across the bottoms.
  • Using two spatulas, carefully lift and transfer the beef slab onto the bottom buns.
  • Layer one layer of cheese across the beef, then add a second layer for extra gooeyness (11 slices total).
  • Spread the browned onions evenly on top of the cheese.
  • Replace the top buns and brush the top with the remaining melted butter; add sesame seeds if desired.
  • Bake at 350°F for about 15 minutes, until cheese is melted and tops are warmed.
  • Let cool for 3–5 minutes, then slice between buns to separate sliders and serve.

Notes
