Ingredients
  

For the Chaffles

  • 1 cup shredded mozzarella cheese Can substitute with cheddar for a different flavor.
  • 1/2 cup almond flour
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 tablespoon alcohol-free vanilla extract
  • 1 tablespoon erythritol Can use other low-carb sweeteners.
  • 1/2 teaspoon cinnamon Optional for extra flavor.

Preparation

  • Preheat your waffle maker according to the manufacturer's instructions.
  • In a bowl, mix together the shredded mozzarella cheese and almond flour until well combined.
  • Add the eggs, baking powder, alcohol-free vanilla extract, erythritol, and cinnamon (if using). Stir everything until you achieve a smooth batter.
  • Spray the waffle maker with a non-stick spray to ensure easy release.
  • Pour the batter into the waffle maker and close the lid, cooking until golden brown.
  • Carefully remove the chaffle from the maker and let it cool slightly before enjoying!

Notes

For creative twists, try adding unsweetened cocoa powder for chocolate chaffles, using banana extract for a nutty flavor, or adding canned pumpkin and spices for a seasonal treat. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
