  • 2 slices sprouted whole-grain or whole-wheat bread Use your choice of bread.
  • 1 tsp olive oil For cooking the eggs.
  • 2 each eggs Large eggs work best.
  • 1/8 tsp salt To taste.
  • 1/4 cup fresh herbs (chopped) Such as parsley, chives, or basil.

Preparation

  • Toast the bread in a toaster or toaster oven until it reaches your desired level of crispiness.

Cooking

  • While the bread is toasting, heat the olive oil in a medium non-stick skillet over medium-low heat.
  • Crack the eggs directly into the hot skillet and gently stir or fold the eggs as they cook for 1.5 to 2 minutes until just set but still moist.
  • Once cooked to your liking, sprinkle in the salt and gently incorporate the fresh herbs.

Serving

  • Plate the toasted bread and top each slice with half of the herbed scrambled eggs. Optionally, add freshly ground black pepper for an added kick. Serve immediately.

Notes

Fresh herbs make a huge difference; avoid dried herbs unless necessary. Consider experimenting with toppings like smoked salmon or sautéed mushrooms.
