  • Salt and black pepper, to taste

  • ½ tsp onion powder (for the meat)
  • 4 cups chopped lettuce OR 2 cups cooked quinoa, brown rice, cauliflower rice Cauliflower rice keeps it low-carb.
  • 1 cup cherry tomatoes, halved
  • ½ cup sliced dill pickles
  • ½ red onion thinly sliced
  • 1 cup shredded cheddar or American cheese
  • 1 each avocado, sliced
  • 4 strips cooked turkey bacon (optional)
  • Jalapeño slices (optional, to taste)
  • 4 each fried eggs (optional, adds protein)

For the burger sauce

  • ½ cup low-fat Greek yogurt
  • 1 tbsp mustard
  • 1 tbsp ketchup
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste

Instructions

Preparation

  • Heat a large skillet over medium. Add the ground beef or turkey.
  • Season with a pinch of salt, black pepper, ½ tsp garlic powder, and ½ tsp onion powder.
  • Break the meat apart and cook, stirring occasionally, until no pink remains (about 8–10 minutes).
  • Drain excess fat from the skillet and return the meat to the pan to keep warm.
  • While the meat cooks, choose your base and prepare it: chop lettuce, cook 2 cups quinoa/rice, sauté cauliflower rice until tender.
  • Slice cherry tomatoes, dill pickles, and red onion. Halve the avocado and slice.
  • Make the sauce: whisk together ½ cup Greek yogurt, 1 tbsp mustard, 1 tbsp ketchup, ½ tsp garlic powder, ½ tsp paprika, and salt and pepper to taste until smooth.

Cooking

  • If using eggs, fry them in a little oil or butter until the whites are set and yolks reach your desired doneness.

Assembly

  • Assemble bowls: start with 1–1.5 cups of your base. Top with a generous portion of the cooked meat.
  • Add tomatoes, pickles, onion, shredded cheese, avocado, jalapeño slices, and turkey bacon as desired.
  • Drizzle each bowl with the yogurt burger sauce. Top with a fried egg if using.
  • Serve immediately, divide into meal-prep containers and refrigerate for up to 3–4 days.

Notes

For meal prepping, store cheese and avocado separately until serving. Use a flat spatula for even browning of meat. Salt the meat towards the end for juicier results.
