Ingredients

For the salmon

  • 4 pieces salmon fillets (skin-on), about 6 oz each
  • 2 tablespoons olive oil (or neutral oil with higher smoke point like vegetable or avocado)
  • 1/4 cup honey Can swap for pure maple syrup
  • 2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced Roast first or use 1-2 cloves for milder flavor if necessary
  • Chopped green onions for garnish

Instructions

Preparation

  • Pat the salmon dry with paper towels and salt the flesh side lightly. Let sit at room temp for 10-15 minutes if you have time.
  • In a small bowl, whisk together the honey, soy sauce, and minced garlic until blended. Set aside.

Cooking

  • Heat a heavy skillet over medium-high until shimmering. Add the oil and swirl to coat.
  • Place fillets skin-side down. Press gently with a spatula for the first 10-15 seconds to keep the skin flat. Cook 4-6 minutes, undisturbed, until the skin is deeply golden and crisp.
  • Flip the fillets and cook the flesh side for 1-2 minutes just to set. Reduce heat to medium-low.
  • Pour the glaze over the fillets and spoon it over the top as it simmers for 1-2 minutes, letting it thicken and become glossy.
  • Transfer salmon to plates. Spoon any remaining pan glaze over the fillets and finish with chopped green onions.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently in a 275°F (135°C) oven for 10-15 minutes. For fresh twists, consider spicy honey-garlic, citrus addition, or miso-honey variations.
